Whats a good way to cook tofu?

I’m not vegetarian.. but I don’t eat a lot of meat, just because I don’t like the way my body feels sluggish and such afterwards.

I eat the occasional shrimp or chicken or turkey, and even more rare a steak or salmon, and maybe once every 4-6 months, a hot dog or hamburger…

So I’ve started eating tofu occasionally to make sure I’m getting a decent amount of protien.. but I only know one way to make it… sauteed and seasoned and served over pasta w/ tomato sauce..

Obviously you can adapt that to different sauces.. and seasonings.. etc…

But what are some more creative ways to prepare tofu?

I have a very tasty recipe which includes tofu as one of the ingredients. It is time-consuming because of the amount of components, but it’s worth it.

Capellini, Chickpeas, and Vegetables with Creamy Curry Sauce
(serves about 6; can freeze leftovers)
Ingredients:
-2 tablespoons olive oil
-1 medium to large onion, minced
-1 carrot, thinly sliced or shaved
-1 red bell pepper, seeded and chopped
-3-4 garlic cloves, minced
-3 teaspoons curry powder
-1 (28-ounce) can diced tomatoes with juice
-1 cup frozen green peas, thawed
-1 to 1-1/2 cups cooked or 1 (15-ounce) can chickpeas, drained and rinsed
-1 (13-1/2 or 14-ounce) can unsweetened coconut milk
-12 ounces soft silken tofu, drained (can use 16 ounces, if desired)
-Sea salt and freshly ground black pepper, to taste
-16 ounces whole wheat capellini (it doesn’t have to be whole wheat, but that’s good), cooked according to manufacturer’s instructions
-1 cup chopped, unsalted dry-roasted peanuts
-2 scallions, minced

1. In a large saute pan, heat the olive oil over medium heat.
2. Add the onion, carrot and bell pepper.
3. Cover and cook until softened, about five minutes (more if you like the vegetables softer).
4. Add the garlic and the curry powder.
5. Stir to blend then add the tomatoes and juice and simmer for 5 to 7 minutes.
6. Add the peas and the chickpeas. Reduce the heat to low.
7. In a food processor combine the coconut milk, tofu, salt and pepper. Process it until it’s smooth.
8. Stir the tofu mixture into the vegetable mixture and simmer gently.
9. Top the cooked capellini with the sauce (I usually stir them together instead of having the sauce only on top), then sprinkle it with the chopped peanuts and the scallions. Serve hot.

What sort of food do you feed your 1 year old?

Damian is almost 1 :( I usually give him food that we are having but some days I make a certain food that he can’t have. Right now is not that much of a problem since his main source of nutrition is still his formula. What kind of foods can I make him? What does your 1 year old eat?

Jimmy answers:

When my kids were 1, they ate:
toast crusts with pb (loved gnawing on these when teething)
canned mandarin oranges
cheerios dumped on the highchair tray (usually bought me enough time to do dishes)
spaghetti and tomato sauce (if you make your own sauce, cook in some grated carrots, zucchini, etc.)
oatmeal
any cooked veggies, mashed (they loved sweet potato)
baby arrowroot cookies
scrambled eggs
applesauce
meat, cut into small pieces or gnawed off a large bone
bananas, sliced
cheese cubes
any pasta with cooked peas and carrots
yogurt
grated apple
grapes cut in half (don’t give whole grapes – choking hazard! Also hot dogs, carrot sticks, or nuts)
pancake pieces

One-year olds especially like any food that they can feed themselves. Good luck!

I want to start making better choices when it comes to food?

I eat alot of junk and fast food i want to change my eating habits but the problem is I don’t know where to start, I can be a picky eater and do not like a lot of vegies but I am willing to try where should i start ?

Jimmy answers:

Great idea! You start by breaking down your basic needs. Fats, protein and carbs. You get fats from natural foods like peanuts and avacados, you get rpotein from meats, and carbs from whole grain nodles.

Here’s a recipe for you.

PEPPERED BLACK BEANS AND SAUSAGE:
___________________
(ingredients)
- 1 onion, chopped,
- 1 green bell pepper, chopped chopped,
- 1/3 cup water,
- 1 teaspoon minced fresh garlic,,
- 3 15oz can black beans, drained and rinsed,
- 1 15o can tomato sauce,
- 1+1/2 teaspoons oregano,
- 1+1/2 teaspoon basil,
- 1 teaspoon white pepper,
- 1/4 teaspoon cayenne pepper
- several twists of freshly ground black pepper,
- 6 nonfat, meat free hot dogs or sausages

place the onion, bell pepper, water, and garlic in a large saucepan. Cook, stirring frequently, for 5 minutes. Add the the remaining ingredients and cook over low heat for 15 minutes, stirring occasionaly.
